George Wolski trained as an engineer before he switched careers to make wine. His family had been making wine in Kakheti for many years but George is the first to bottle it. All the work is done organically and all the vines are dry-farmed. He is meticulous about cleaning his qvevri since he uses zero sulfur in his wines.
The Khikhvi spends one week, 100% of the grapes on its skins. It's got lots of green tea, caramel, and Arnold Palmer vibes, with a zappy tension. The mix of earthy umami and detailed, energetic lift is really nice. This is the deeper end of the pool for orange wines but it's well worth diving in. Jonathan Kemp
