Notes from the Producer: In Basque Country or “Euskal Herria”, we have native apple varieties that are only produced here, and there is one apple that clearly stands out: Errezileor Errezil Sagarra. Late in ripening, sharp, lemony, and high in sugars,this variety of apple was traditionally keptover strawin the ganbaras(attics) of Basquefarmhouses. It can last all winter, losing water and wrinkling through a natural concentration process. It does not rot.The latest generation of the Zapiain family, Mikel and Egoitz Zapiain, have taken advantage of this local gem to produce Bizi Goxo(“sour and “sweet”), a traditional ice/dessert cider of superb quality, but with a unique Basque characteristic, reminiscentof the natural cider ubiquitous throughout this region.
About the Producer, Zapiain Sagardotegia: The Zapiain family has an interesting piece of evidence of how far cider-production runs throughoutits history—a fine from the city of San Sebastian deliveredto Juanes de Zapian for untaxed sale of cider in 1595. It’s safe to say production started some years before! Years laterin 1961, Nicolás Rosario Zapiain Agirregabiria, decided to leave the livestock businessand focused fully on the production of Sagardoa, working to build a cellar with 22 chestnut foeders with 15,000L of capacity each. Today, Zapiain is among the 3 largest and most-storied producers of cider in Basque Country and a producer of award-winning Calvados and ice cider.
