The "Pari Finesse" is a surprisingly fresh red from the southern French region of Costières de Nîmes. Emilie & Brice Bolognini have operated this domaine since 2003. They have converted the vines to Biodynamic agriculture, they work by hand, and let sheep graze amongst the vines in the winter. The wine is an equal parts blend of Grenache and Syrah (with a dash of Carignan) that comes in at 14.5% alcohol. This is so often a recipe for power, richness and intensity. But in this case it is pleasantly atypical. On the nose, the sun-drenched fruits, mulberries and red plums, are complimented by a wild mix of sagebrush, dried herbs, and wilted roses. The ripe fruit, dusty, and floral notes continue onto the palate with firm tannins, more ripe fruits, and an herbal edge. The finish playfully skips across the tongue and lingers just long enough to remind you to take another sip.
Optional food pairing: shoot yourself a wild boar, roast it over foraged tinder with herbs and fresh pomegranate until juicy. Then skewer the meat and do not use silverware. [Alex Alan, November 2021]
