A collaboration between Antonio Sousa and Savio Soares. Antonio is a permaculture farmer in an obscure region called Baião outside of Vinho Verde, Portugal. He was using Biodynamic practices in the vineyard remained a little more conventional in his cellar work. Savio pushed him to make this wine with no additives or adjustments other than ground chestnut flowers to help stabilize the wine, allowing for just a very small sulfur addition at bottling of 10mg/liter.
