In recent years, the best sparkling winemakers in Spain have abandoned the Cava DO because of its dominance by just two large industrial producers. AT Roca is at the forefront of this, working organically and hand harvesting. This is a blend of local grapes Macabeo (55%) and Xarello (45%) made in the traditional method, like Champagne. Aged sur lie for over 20 months, with zero dosage. It’s one of the best values in bubbles out there: crisp, dry, mineral, and elegant with lemon, sea breeze, and beautiful floral overtones.
