Jorge Santos & Rui Lopes are finding and reviving parts of Portugal's history that have been forgotten. For many years, monks in this area of coastal Portugal needed red wine for their sacraments, but most of the local grapes were white. So, some 500 years ago they developed this technique of blending in just a splash of red grapes in with the white to give it the color they required. It's one of the oldest wine 'recipes' in Portugal. In this case the red grape Trincadeiralas is blended with Fernao Pires (aka Maria Gomes). Bright medicinal cherry with ethereal, floral notes are mixed with iron, salt, herbs, and complex umami. Unique and beautiful. Jonathan Kemp
