Sebastian Brunet "100%" Grolleau Pet Nat NV

This wine is 60% Grolleau with the rest of the blend split between Gamay and Cabernet Franc. It's vaguely salty, very fresh, and light with flavors of fresh strawberry, sour cherry, and a lightly herbal finish. The winery is based in Vouvray and the grapes come from 55-year old vines planted in flinty-clay soils. Hand-harvested in September and directly pressed. Spontaneous fermentation takes place in stainless steel with indigenous yeasts lasting three weeks without temperature control. Allowed to rest in tank for approximately two months and bottled unfiltered. Upon disgorging the wine is given minuscule amount of SO2. [AA, 07/22]
