70% Gamay and 30% Pinot Noir planted on sand, silex, and clay. Blueberry, lavender, and a kind of Pineau d'Aunis feeling to this one. A touch of spice and black olive provide some contrast to the more floral aromas. Delicious and immediate, it has an elegant, gorgeous balance of umami and lifted ethereal freshness. Very fine tannin with pointed details take it far beyond the realm of glou-glou.
The entire process begins in cement and is then moved to a tank to settle and age on lees before being bottled with no SO2. [Jonathan Kemp, September 2021]
