A collaboration between Antonio Sousa and Savio Soares. Antonio is a permaculture farmer in an obscure region called Baião outside of Vinho Verde, Portugal. He was using Biodynamic practices in the vineyard remained a little more conventional in his cellar work. Savio pushed him to make this wine with no additives or adjustments other than ground chestnut flowers to help stabilize the wine, allowing for just a very small sulfur addition at bottling of 30ppm
The two red grapes (Tinta Cão & Vinhão) were sourced from a small producer practicing organic viticulture in the Vinho Verde Region, located in Marco de Canavese. Since Vinhão is highly pigmented, the maceration time was kept at a minimum. Spontaneous fermentation was done in concrete and stainless steel with chestnut flowers and combined with 10% Loureiro to add zest and other aromatic notes. Unfiltered.
