Their commitment to organic farming and low sulfur bottlings have changed the perception of German wine in Germany as well as the US.
Their liter of barely off-dry Riesling is a delicious, versatile tool. The tension between the high acidity and a little sweetness is irresistible. Using far less sulfur than the typical Riesling gives it even more directness and freshness without losing any of the taut focus. This naturally shines with spicy cuisine, but it will work with almost anything you want it to, from asparagus to oysters to pizza. Or try it with a spicy asparagus oyster pizza.
