On the palate the wine is so lively and layered, exuberant and jumpy. At first I’m reminded of drinking soda-pop as a child — Ginger Ale, Fanta, maybe a Seven-Up. Underneath these crunchy, fruity sugar notes, there’s a spicy vegetal tone, something between pine cone and ginger and fresh shaved carrots. One of the things I love about this wine is that when you smell it, it feels like it might be overwrought — there’s so much plush, lush fruit character that surely the wine will show more sap than snap. But those fears are dispelled with the first sip: the texture is there without the weight. Complex, unconventional.
Vinification Method: Grapes are hand harvested and destemmed. Fermentation takes place in used 500, 1000 and 1500-liter barrels. The wine goes through elevage in 500-liter barrels for about 8 months, with no batonnage (lees stirring). The wine is bottled unfined, unfiltered, and with zero addition of sulfur. The vines are 35 years old, grown on gravel soils. [Matthew Hawkins, November 2020]
