The grapes come from the Three Branches Vineyard in Iowa County and Possum Ridge Vineyard near La Farge, Wisconsin. It is fermented in barrel and aged on lees for 22 months. Erin states that, “she loves LaCrosse because, like Chardonnay, she thinks of it as a blank canvas for winemaking.” Her goal was to make a lush, rich, creamy style wine with a squeeze of lemon in the same family of white wines from Jura, Savoie and Austria.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eI’d have to agree with Erin. This definitely occupies a similar style to my favorite lush and opulent wines from Jura, Loire, and Savoie. The soils are granitic and the parcel is close to the Pacific Ocean, with its cooling influence bringing a lifting acid tension to the fruit.  The grapes were harvested by hand and destemmed, then fermented in open-top plastic bins with their skins, then the wine is racked to rest in a stainless steel tank. Now, working with his organically farmed and hand-harvested Riesling, Grüner Veltliner, Müller Thurgau, Welschriesling, Sauvignon Blanc, St. Laurent, Rotburger and Pinot Noir, he natural wines with spontaneous fermentations and small additions of SO2.\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"p1\"\u003e\"Vögel und Meer\" (Bird and Sea) is a blend of 67% Sauvignon Blanc and 33% Welschriesling from the organically-farmed Wohra and Ganslgraben vineyards, planted on loam over gneiss and loess. The Welschriesling is destemmed and pressed into used barrels, and the Sauvignon Blanc is pressed with the whole-bunches into the Welschriesling to ferment spontaneously for two weeks. The wine goes through malolactic conversion and is bottled dry. Welschriesling and Sauvignon Blanc are both high acid varieties with aromatic qualities, but the breadth of the palate and its savory aspects may surprise. The nose shows passionfruit, blood orange, and gooseberry, but also more savory notes like white pepper and ginger. The palate is long and vibrant with minerality and acidity.
