Abbazia di Novacella was founded by the Monks of Augustinian Order of Canons Regular in 1142, near the city of Bolzano in Northwestern Italy. The vineyards in the Bressanone valley basin, planted at above 650 meters above sea level (over 2100 feet!), have never seen chemical farming, are planted on mica schist, para gneiss and quartzite soils created by a glacier moving through the region thousands of years ago. With over 850 years of experience in this beautiful region, the wines from Abbazia di Novacella are steeped in history, and are some of the finest examples from Alto Adige.
While Sylvaner is mostly planted in Germany and Austria, the monks at Abbazia di Novacella have been growing the grape for hundreds of years. Here, at higher elevation than its counterparts, the grape matures slowly allowing for a more aromatic and elegant rendition. Fermented in stainless steel, and aged in a combination of steel and acacia casks.
Bursting with ripe green pear, golden apple and smoky minerals on the nose, this is pure alpine joy. The combination of steel and acacia aging allows for richness to develop without the wine getting weighty. Lots of melon and orchard fruit, met by flinty minerals and subtle herbaceous notes of sage and mint.
