“La Soif Des Salines” or “The Thirst For Salt” is a fitting name for a wine that comes from vines planted 20 minutes from the famous Camargue salt flats near Nîmes in the south of France. If you’ve seen the sea salt in a blue cylinder with a whale on it, La Baleine, this is where it comes from. Emilie and Brice Bolognini of Mas Mellet had their first vintage in 2003 and have moved further into natural farming and winemaking since then. They now have 15 hectares of vines and work biodynamically, with thousands of olive, pomegranate, mimosa, and fig trees surrounding the vines.

A few years back they sold some of their fruit to Eric Pfifferling of l’Anglore and together they made a cuvée named Salines, employing Pfifferling’s lighter touch and shorter macerations to balance out the effects of the Mediterranean heat. Now Mas Mellet makes the wine themselves and it is a very similar profile to the l’Anglore version. It’s a darker rosé, nearly a light red, made from equal parts of Aramon (a local red grape) and Bourboulenc (a local white). Just four days of maceration in concrete tank with 15ppm of sulfur added at bottling. It’s salty, of course, but supremely refreshing with lower acidity, cherry, and strawberry notes. Jonathan Kemp
